There are several fish that are called "fish that grow up quickly," including famous yellowtail, sea bass, and mullet, but the Spanish mackerel is said to grow up particularly quickly among them. The fry hatch from extremely small eggs, and initially measure just 4mm in size, but by the fourth day after birth, sharp teeth grow into their wide, slit mouths, and they begin to feed voraciously on the fry of other fish and crustaceans.
At one month after birth, it grows to 5cm, and then the pace increases from there, exceeding 10cm at one and a half months.
They grow at an incredible rate, eating small fish such as sardines and sand lances, reaching 50cm in one year, 70cm in two years, and 80cm in three years.
As it grows, it is called Sagoshi ⇒ Yanagi ⇒ Sawara .
In the Kansai region, where it has been eaten since ancient times, particularly around the Seto Inland Sea, sawara is a fish that is over 70cm in size and weighs over 2kg, and it has been considered a valuable food item and loved by many.
In recent years, perhaps due to rising sea temperatures, they have been caught in areas such as Tohoku and Hokkaido, and it has been noted that their habitat range is expanding.
Its mild, soft flesh makes it especially popular when grilled, and it is an excellent fish that can be widely used as a popular fish.
