Boneless sole has recently become increasingly popular.

Although it has name value as it is often used in French cuisine, there were concerns that it might be too expensive, and so we have not yet been able to introduce it to many customers.

However, recently, as we have been introducing it to people through various activities, it seems that people are gradually becoming aware of its appeal.

There are several types of edible sole, mainly the "red tongue sole" and the "black tongue sole." These names are also slightly unusual, such as "cow tongue sole" because of its shape, which resembles a cow's tongue, and "dog tongue sole" for a species with a slightly thinner body.

Although the name includes the word "flounder," it is classified as a type of flatfish, and is therefore nutritionally similar to that of flatfish. It is widely distributed from the waters off the coast of Japan south of Tohoku to the East China Sea, Taiwan, China, and Vietnam.
