"Inari"
text
Foxes are considered messengers of the Inari god and guardians of agricultural crops. This is because they exterminate rats that eat and destroy precious crops. As a token of gratitude, people began offering fried tofu, which has a texture similar to meat, to foxes. This led to the name "Inari" for dishes made with fried tofu, and it is said that this is how the custom of eating Inari sushi began.

Another feature of inari sushi is that it is shaped differently in the Kanto and Kansai regions. In the Kanto region, inari sushi is shaped like a rice bale, while in the Kansai region, inari sushi is triangular, resembling a fox's ear.

Fushimi Inari Taisha Shrine in Kyoto, the head shrine of the approximately 30,000 Inari shrines across the country, is said to have been enshrined on the first day of the horse month, over 1,300 years ago. This connection between the first day of the horse month and Inari worship led to the first day of the horse month being celebrated as the first day of the horse month, when prayers for a good harvest are made.Nowadays, climate change caused by global warming is affecting crop harvests in many areas, so we make inari sushi and pray for a good harvest.
