Grilled Spanish mackerel in spicy sauce

Ingredients (for 1 person)

  • Plus Sawara (bone removed) 60g 1 piece
  • a little salt
  • 1/4 teaspoon garlic (grated)
  • 1/8 teaspoon grated ginger
  • 2g (1/2 teaspoon) salad oil
  • <Seasoning A>
  • 9g ketchup (1/2 tablespoon)
  • 3g sugar (1 teaspoon)
  • 1.5g soy sauce (1/4 teaspoon)
  • 1.3g (1/4 teaspoon) vinegar
  • Doubanjiang 0.7g (1/10 teaspoon)
  • 15g water (1 tablespoon)
  • <Seasoning liquid B>
  • 1.5g (1/2 teaspoon) potato starch
  • 2.5g water (1/2 teaspoon)
  • Garnish with coriander

Cooking in a frying pan

  • 1. Sprinkle salt on the mackerel to season it.
  • 2. Put garlic, ginger, and <Seasoning A> in a pot and bring to a boil. Add <Seasoning B> and thicken to make a spicy sauce.
  • 3 Add salad oil to a frying pan and cook over medium heat from the front side of the mackerel. Once browned, reduce the heat, cover and cook for 5-6 minutes until cooked through.
  • 4. Place [3] in a serving dish and pour the sauce [1] over it.
