Grilled John Dory with Kinshi (thin strips) [March event food]
Ingredients (for 1 person)
- Plus John Dory (bone removed) 60g 1 piece
- 5g green beans
- 4g shredded egg
- <Seasoning A>
- 5g soy sauce (just under 1 teaspoon)
- 2g sugar (2/3 teaspoon)
- 5g sake (1 teaspoon)
- <Seasoning B>
- a little salt
Cooking in a frying pan
- 1 Combine the seasonings A and marinate the John Dory for 30 minutes to an hour.
- 2 Grill [1].
- 3 Boil the green beans until golden brown, then soak them in cold water, drain, and cut them into thin diagonal slices.
- 4 Place [2] in a serving dish, garnish with shredded egg and green beans, and sprinkle a little salt on top.
Steam convection cooking
- 1 Combine the seasonings A and marinate the John Dory for 30 minutes to an hour.
- 2. Place a baking sheet on the iron plate and arrange the John Dory pieces (1) on it.
- 3 Preheat the steamer convection oven to combination mode (200-230°C) and heat at 30-40% steam for 10 minutes.
- * Since you will be putting frozen fish in the oven, please preheat the oven to a temperature 20 to 30°C higher than the heating temperature.
