Sea bass and eggplant with crab stick sauce

Ingredients (for 1 person)
- Plus sea bass fillet (bone removed) 60g 1 piece
- a little salt
- Appropriate amount of flour
- salad oil (appropriate amount)
- 15g eggplant
- 10g crab sticks
- 2g ginger (chopped)
- 1g garlic (minced)
- 1/8 teaspoon sesame oil
- <Seasoning liquid A>
- 0.7g oyster sauce
- soy sauce 0.3g
- Powdered clear soup base 0.3g
- 40ml water
- a little salt and pepper
- <Seasoning liquid B>
- 1g (1/3 teaspoon) potato starch
- 3ml water (just over 1/3 teaspoon)
- Green onion (finely chopped )
Cooking in a frying pan
- 1Sprinkle salt on the frozen sea bass and coat it in flour.
- 2. Cut the eggplant into small chunks and the crab sticks into pieces about 2 cm long and flake them apart.
- 3. Add a generous amount of salad oil to a frying pan and deep fry the eggplant over medium heat.
- 4 Place the sea bass (1) skin-side down into the frying pan (3) and once browned, turn it over, reduce the heat to low, and fry for 5-6 minutes until cooked through.
- 5. Put sesame oil, ginger, and garlic into a pot and stir fry quickly over low heat. Once fragrant, add <Seasoning A> and crab sticks, and once boiling, add <Seasoning B> to thicken.
- 6 Place [3] and [4] in a bowl, pour [5] over, and sprinkle with green onions.
Steam convection cooking
- 1. Coat frozen sea bass in flour.
- 2. Place [1] in a hotel pan and spray with spray oil.
- 3. Heat in a preheated steam convection oven (combination mode) at 230°C with 30% steam for 10 minutes.
- From step 4 onwards, the same applies as for frying pan cooking from step 5 onwards.
