Grilled mackerel with salt and koji
Ingredients (for 1 person)
- Plus Sawara (bone removed) 60g 1 piece
- 6g salt koji
- 5g mirin (just under 1 teaspoon)
- 2g (1/2 teaspoon) oil
- Spinach garnish
Cooking in a frying pan
- 1. Mix the salt koji and mirin in a bowl, add the frozen sawara and leave to soak for 30 minutes to an hour.
- 2 Add salad oil to a frying pan and cook over medium heat from the front side of the mackerel. Once browned, flip it over, reduce the heat, cover and cook for 5-6 minutes until cooked through.
- 3 Place [2] in a bowl and garnish with spinach.
- * Salad oil is used for frying. It is included in the nutritional value.
- Grill cooking is also possible.
Steam convection cooking
- 1. Mix the salt koji and mirin in a bowl, add the frozen sawara and leave to soak for 30 minutes to an hour.
- 2Preheat the steamer convection oven.
- 3. Place cooking paper on the iron plate and arrange the fish from [1].
- 4 Heat the steamer convection oven in combi mode at 230°C with 30-40% steam for approximately 10 minutes.
- * When cooking large quantities, please preheat the oven to a high temperature.
