Spanish mackerel with sweet and sour vegetable sauce
Ingredients (for 1 person)
- Plus Sawara (bone removed) 60g 1 piece
- 4g potato starch
- Frying oil (appropriate amount)
- 20g onion
- 10g green peppers
- 5g carrots
- 30g water
- <Seasoning A>
- 6g soy sauce
- 6g mirin
- 3g sugar
- 2.5g of sake
- 3g vinegar
- 1g potato starch
Cooking in a frying pan
- 1. Coat the frozen mackerel in potato starch and fry at 180°C for 7-8 minutes, checking the condition while you fry.
- 2. Put the julienned onions, bell peppers, carrots and water into a pot, cover and simmer until boiling, then add seasoning A and simmer further.
- 3. Stir in the water-dissolved potato starch to thicken the mixture (water is not included in the recipe).
POINTApplication tips
- 1. White miso grilling pairs well with citrus fruits such as yuzu. It burns easily, so cook it slowly at a low temperature.
