Japanese-style saury stewed in tomato sauce
Ingredients (for 1 person)
- Plus Pacific saury (bone removed) 60g/1 fish
- 4ml olive oil
- 1.5g sliced garlic
- <Seasoning A>
- 80g tomato sauce
- 5ml white wine
- 2g red miso
Steam convection cooking
- Mix 1 sliced garlic with olive oil.
- 2. Coat the frozen saury with (1) and arrange it in a hotel pan in a steam convection oven.
- 3. Heat in a preheated steam convection oven at 220°C with 30% steam for 8-9 minutes.
- 4 While heating, mix A.
- 5 Remove (3) and pour (4) evenly over the saury, then cover and heat again.
- Serve on 6 plates and garnish with basil.
POINTApplication tips
- 1. Fish becomes softer when cooked with sour ingredients. This method can be used with saury, mackerel, sardines, horse mackerel, etc.
