Grilled saury with soy sauce and koji
Ingredients (for 1 person)
- Plus Pacific saury (bone removed) 60g/1 fish
- 3g soy sauce
- 2.5g salt koji
- [Side dish]
- Pickled radish with cherry blossoms
Steam convection cooking
- 1. Coat the frozen saury in soy sauce koji and arrange it on a tray in a steam convection oven.
- 2. Spread any remaining soy sauce koji on the arranged saury.
- 3. Heat in a preheated steam convection oven at 220°C with 30% steam for 8-9 minutes.
- Arrange on 4 plates and garnish with pickled daikon radish.
POINTApplication tips
- 1. By marinating the saury in soy sauce and koji, it becomes soft and plump without shrinking. It burns easily, so be careful with the heat.
