Saury stew with kimchi is a familiar home-cooked dish in Korea. The addition of kimchi reduces the fishy smell of the saury and adds a delicious, spicy kick. It goes well with white rice.

Ingredients (for 1 person)
- Plus Pacific saury (bone removed) 60g/1 fish
- 30g kimchi
- 20ml noodle soup
- 15ml mirin
- 100ml water
- [Side dish]
- White sesame
- Thread chili peppers
- green onions
Steam convection cooking
- 1. Place the frozen saury in a hotel pan in a steam convection oven. Pour the seasoning mixture evenly over the saury, then cover and heat.
- Place on two plates and sprinkle with white sesame seeds, chili threads, and green onions.
POINTApplication tips
- 1. The sour kimchi adds a nice flavor. If you don't have any kimchi, you can use Japanese pickled cabbage and kimchi base instead.
