Ingredients (for 1 person)

  • Plus Salmon fillet (bone removed) 60g 1 piece
  • A little salt (for fillets)
  • Appropriate amount of flour
  • Frying oil (appropriate amount)
  • 4g pickled mustard greens
  • 3g green onions
  • 2g ginger
  • <Seasoning liquid>
  • 6g soy sauce (1 teaspoon)
  • 2.5g (1/2 teaspoon) vinegar
  • 3g mirin (1/2 teaspoon)
  • 20ml of clear soup

Cooking in a frying pan

  • 1 Coat the salmon in flour and fry in oil.
  • 2. Shred the pickled mustard greens, finely chop the ginger, and finely chop the green onions.
  • 3. Put "2" and the seasoning into a bowl and mix well.
  • 4. Place the salmon (1) in a bowl and pour the sauce (3) over it.

Steam convection cooking

  • 1. Coat the salmon in flour and arrange them in a hotel pan, making sure they do not overlap.

  • 3 Preheat the oven to a temperature 20-30°C higher than the cooking temperature (230°C) using combination mode steam at about 30%.
