Salmon with Pickled Mustard Green Onion Sauce
Ingredients (for 1 person)
- Plus Salmon fillet (bone removed) 60g 1 piece
- A little salt (for fillets)
- Appropriate amount of flour
- Frying oil (appropriate amount)
- 4g pickled mustard greens
- 3g green onions
- 2g ginger
- <Seasoning liquid>
- 6g soy sauce (1 teaspoon)
- 2.5g (1/2 teaspoon) vinegar
- 3g mirin (1/2 teaspoon)
- 20ml of clear soup
Cooking in a frying pan
- 1 Coat the salmon in flour and fry in oil.
- 2. Shred the pickled mustard greens, finely chop the ginger, and finely chop the green onions.
- 3. Put "2" and the seasoning into a bowl and mix well.
- 4. Place the salmon (1) in a bowl and pour the sauce (3) over it.
Steam convection cooking
- 1. Coat the salmon in flour and arrange them in a hotel pan, making sure they do not overlap.

- 3 Preheat the oven to a temperature 20-30°C higher than the cooking temperature (230°C) using combination mode steam at about 30%.
- 4. Heat the convection oven at 230°C with 30% steam for 9 to 10 minutes.
