Deep-fried mackerel and eggplant with thick sauce
Ingredients (for 1 person)
- Plus mackerel fillet 60g 1 piece
- 30g eggplant
- Green beans 5g
- Appropriate amount of flour
- Frying oil: appropriate amount
- <Seasoning liquid A>
- 6g soy sauce (1 teaspoon)
- 3g sugar (1 teaspoon)
- 2.5g sake (1/2 teaspoon)
- 30g water (2 tablespoons)
- <Seasoning liquid B>
- 3g (1 teaspoon) potato starch
- 5g water (1 teaspoon)
Cooking in a frying pan
- 1. Cut the eggplant into chunks. (For those who find it difficult to chew, make cuts in the skin.)
- 2 Boil the green beans until golden brown, then place in cold water, drain and cut into 4cm pieces.
- 3. Add oil to a pot and deep fry the eggplant.
- 4 Coat the mackerel in flour and fry in oil "3".
- 5. Bring <Seasoning A> to a boil in a pot and thicken with <Seasoning B>.
- 6 Arrange the mackerel (4), eggplant (3), and green beans (2) and pour the sauce (5) over them.
