European horse mackerel with green onion and salt sauce
Ingredients (for 1 person)
- Plus European horse mackerel fillet 60g 1 piece
- a little salt
- 10g green onion
- 3g lemon
- 7.5g lemon juice (1/2 tablespoon)
- 4g (1 teaspoon) sesame oil
- 1g salt (1/6 teaspoon)

- snap peas
Cooking in a frying pan
- 1.Sprinkle salt on the horse mackerel.
- 2 Chop the green onions roughly.
- 3 Cut the lemon into 8 equal pieces, each 3mm thick.
- 4. Add "2" and the seasoning to a bowl and mix well.
- 5 Grill "1", place in a serving dish, pour "4" over, and garnish with lemon.
Steam convection cooking
- 1. Line a hotel pan with parchment paper and arrange the salted horse mackerel on top.
- 2. Heat in a preheated steam convection oven on combi mode at 230°C with 30% steam for 8 to 10 minutes.
