Grilled black turban with garlic and yuzu
Ingredients (for 1 person)
- Plus Black Rockfish 60g
- <Seasoning A>
- 4g soy sauce
- 2g mirin
- 2g of sake
- 0.5g garlic
- A little yuzu (peel)

Cooking in a frying pan
- 1 Grate the garlic and yuzu peel.
- 2 Mix A together, mix with the black rockfish and marinate for at least 10 minutes.
- 3 Arrange the black rockfish on a fish grill and grill for 7-8 minutes, then pour the remaining sauce A over them and cook for about 1 minute, checking carefully until the surface is dry.
Steam convection cooking
- 1 Grate the garlic and yuzu peel.

- 4 Bake in a preheated steam convection oven at 220-230°C with 30% steam for 8-9 minutes, checking carefully.
