Mocha stewed in red wine [December special event food]
Ingredients (for 1 person)
- 1 piece of mocha fillet 60g
- a little salt and pepper
- Appropriate amount of flour
- 1 teaspoon salad oil
- 25g onion
- 25g broccoli
- 20g cauliflower
- 1 carrot, sliced 3mm thick
- 1 teaspoon salad oil
- 1/2 tablespoon flour
- <Seasoning liquid>
- 40ml red wine
- 60ml water
- 1 tablespoon ketchup
- 1 teaspoon soy sauce
- 1 teaspoon mirin
Cooking in a frying pan
- 1. Season the moka with salt and pepper and coat in flour.
- 2. Cut the onion into thin wedges, separate the broccoli and cauliflower into small florets, and cut the carrot into star shapes.
- 3 Boil the broccoli, cauliflower, and carrots until golden brown, then drain.
- 4. Heat salad oil in a frying pan over medium heat, fry ① on both sides, and set aside.
- 5 Heat the salad oil in the frying pan (step 4) over medium heat, fry the onion until soft, add the flour and stir-fry, then add the seasoning and simmer for 5 minutes.
- 6. Place the mocha from ④ into a bowl, pour over ⑤, and garnish with ③.
Steam convection cooking
- 1. Cut the onion into thin wedges, separate the broccoli and cauliflower into small florets, and cut the carrot into star shapes.
- 2 Boil the broccoli, cauliflower, and carrots until golden brown, then drain.
- 3 Heat salad oil in a frying pan over medium heat and fry the onion until soft, then add the flour and stir-fry, then add the seasoning and simmer for 5 minutes.
- 4Sprinkle salt and pepper on the moka to season, then coat in flour.
- 5. Place ④ in a hotel pan and drizzle with oil. (If using spray oil, spray evenly over the entire surface.)
- 6 Heat in a preheated steamer on combination mode at 230°C with 30% steam for about 9-10 minutes.
- 7. Place the mocha from ⑤ into a bowl, pour ③ over it, and garnish with ②. /ul>
