Mocha with sweet and sour sauce
Ingredients (for 1 person)
- 1 piece of mocha fillet 60g
- a little salt and pepper
- 1/2 tablespoon flour
- Frying oil (appropriate amount)
- <Seasonings>
- 1 teaspoon sugar
- 1 teaspoon vinegar
- 1 teaspoon soy sauce
- A little green onion (shiga negi)
Cooking in a frying pan
- 1 Season the moka with salt and pepper, coat with flour and fry in oil.
- 2 Mix the seasonings, place ① in a saucepan, and garnish with chopped green onions.
Steam convection cooking
- 1 Season the moka with salt and pepper and coat in flour.
- 2. Place ① in a hotel pan and drizzle oil over the surface. (If using spray oil, spray over the entire surface.)
- 3 Heat in a preheated steamer on combi mode at 230°C with 30% steam for 9 to 10 minutes.
- * Preheat the steamer to a temperature 20 to 30°C higher.
