Ingredients (for 1 person)

  • Plus Menuki (bone removed) 60g 1 piece
  • Knotted kelp: 1g (1 piece for commercially available oden)
  • 1 carrot (sliced ​​into 3mm thick slices)
  • Snow peas: 2 pieces
  • <Seasoning A>
  • Sugar: 4.5g (1 1/2 teaspoons)
  • Soy sauce: 6g (1 teaspoon)
  • Sake: 10ml (2 teaspoons)
  • Water (kelp pickling liquid): 100ml
  • <Seasoning B>
  • Potato starch: 1.5g (1/2 teaspoon)
  • Water: 2.5ml (1/2 teaspoon)

Cooking in a frying pan

  • 1. Soak the knotted kelp in water. Cut the carrot into round slices (preferably into flower shapes).
  • 2 Remove the strings from the snow peas, boil them until they are golden brown, then place them in cold water and drain.
  • 3. Add seasoning A, kelp, and carrots to a pot and simmer over medium heat until boiling. Add the menuke fish and simmer until cooked through. Transfer to a serving dish.
  • 4. Add the water-dissolved potato starch (Seasoning B) to the broth remaining in the pot, mix, and place over medium heat. Once thickened, pour over "3" and garnish with the snow peas ("2").

Steam convection cooking

  • 1. Preheat a steam oven to 170°C with 100% steam and combi mode. Place the oysters and "1" in a hotel pan, cover with kitchen paper, and pour over the mixed ingredients of <Seasoning A> and water. Heat for 15 minutes. After heating, let cool slightly to allow the flavors to soak in.
  • 2. Put the remaining broth into a pot and bring to a boil. Thicken with seasoning B and pour over the menuke in a bowl.
