Grilled codfish with kelp tea
Ingredients (for 1 person)
- Plus Menuki (bone removed) 60g 1 piece
- 0.2g salt
- <Seasoning A>
- 1g kelp tea
- 1.5g of sake
- <Side dish>
- perilla
Cooking in a frying pan
- 1. Sprinkle salt on the menuke.
- 2. Arrange the menuke and spread the well-mixed A on top.
- 3. Grill on a fish grill for 7-8 minutes, checking carefully. If you have any leftover A, brush it on as you grill.
- 4 The amount of salt in kombucha tea may vary depending on the manufacturer, so please check beforehand.
- 5Kombucha can be dissolved in hot water and drunk, or used as a solid seasoning in place of salt to add flavor.
Steam convection cooking
- 1. Sprinkle salt on the menuke.
- 2. Arrange the menuke and spread the well-mixed A on top.
- 3 Bake in a preheated steam convection oven at 220-230°C with 30% steam for 8-9 minutes, checking carefully.
