Rockfish with green onion and ginger sauce
Ingredients (for 1 person)
- Plus Rockfish (bone removed) 60g 1 piece
- Green onion: 2g
- Ginger: 1g
- Broad beans: 2
- <Seasoning A>
- Sugar: 2g (2/3 teaspoon)
- Soy sauce: 6g (1 teaspoon)
- Vinegar: 5g (1 teaspoon)
- Sesame oil: 2g (1/2 teaspoon)
Cooking in a frying pan
- 1 Finely chop the green onions and ginger.
- 2 Boil the broad beans and remove the skin.
- 3 Place the rockfish on a heat-resistant plate, cover with plastic wrap, and heat for 2 minutes and 30 seconds.
- 4 Combine "1" and "2" in a bowl, mix well, pour over "3", and garnish with broad beans.
Steam convection cooking
- 1. Place the rockfish in a hotel pan and heat in steam mode at 100°C and 100% humidity for 10 minutes, then serve on a plate.
- Place the broad beans in a 2- hole hotel pan and heat in steam mode at 100°C for 5 minutes. Remove and cool in a blast chiller.
