Ingredients (for 1 person)

  • Plus Rockfish (bone removed) 60g 1 piece
  • Green onion: 2g
  • Ginger: 1g
  • Broad beans: 2
  • <Seasoning A>
  • Sugar: 2g (2/3 teaspoon)
  • Soy sauce: 6g (1 teaspoon)
  • Vinegar: 5g (1 teaspoon)
  • Sesame oil: 2g (1/2 teaspoon)

Cooking in a frying pan

  • 1 Finely chop the green onions and ginger.
  • 2 Boil the broad beans and remove the skin.
  • 3 Place the rockfish on a heat-resistant plate, cover with plastic wrap, and heat for 2 minutes and 30 seconds.
  • 4 Combine "1" and "2" in a bowl, mix well, pour over "3", and garnish with broad beans.

Steam convection cooking

  • 1. Place the rockfish in a hotel pan and heat in steam mode at 100°C and 100% humidity for 10 minutes, then serve on a plate.
  • Place the broad beans in a 2- hole hotel pan and heat in steam mode at 100°C for 5 minutes. Remove and cool in a blast chiller.
