Grilled rockfish with sesame miso

Mayonnaise is used as a secret ingredient to add richness. It's delicious even when cooled, so it's also recommended for bento lunches.

Ingredients (for 1 person)

  • Plus Rockfish (bone removed) 60g 1 piece
  • 15ml of sake
  • 0.5g salt
  • 3g white miso
  • 5g mayonnaise
  • 5ml mirin
  • 2g ground sesame seeds
  • [Side dish]
  • Pickled radish
  • Pickled mustard greens

Steam convection cooking

  • 1 Mix sake and salt.
  • 2. Place the frozen rockfish on a tray in a steam convection oven and sprinkle with (1).
  • 3 Heat in a preheated steam convection oven.
  • 4. Remove from heat and spread a mixture of white miso, mayonnaise and mirin on the surface of the rockfish, sprinkle with ground sesame seeds and reheat.
  • 5. Garnish with pickled daikon radish and mustard greens.

POINTApplication tips

  • 1) By baking the bread using steam from a steam convection oven to replenish moisture, it will have a moister texture.
