John Dory with mayonnaise and mustard sauce
Ingredients (for 1 person)
- Plus John Dory (bone removed) 60g 1 piece
- 0.3g salt
- a little pepper
- 2g flour
- 1.5g olive oil
- 1g garlic
- 5g white wine

- 5g mayonnaise
- 5g hot water
- 1.5g sugar
- Whole grain mustard 0.7g
- a little pepper

- Penne with tomato sauce

Steam convection cooking
- 1Sprinkle salt and pepper on the John Dory and coat in flour.
- 2 Heat olive oil in a frying pan and add sliced garlic to bring out the aroma.
- 3 Arrange the John Dory, drizzle with the olive oil and white wine from step 2, and bake in a preheated steam convection oven at 220-230°C with 30% steam for 8-9 minutes, checking the condition while cooking.
- 4. Dissolve sugar in hot water and once cooled, mix with mayonnaise that has been mixed with whole grain mustard and pepper.
- 5 Place the John Dory in a serving dish and pour the sauce from step 4 over it.

- 1 If you want to lower the calorie content, you can add some drained yogurt.
