John Dory simmered in shaved ice
Ingredients (for 1 person)
- Plus John Dory (bone removed) 60g 1 piece
- 100g daikon radish
- 1 radish leaf
- 2 teaspoons soy sauce
- 2 teaspoons sugar
- 100ml water
Cooking in a frying pan
- 1 Grate the daikon radish. If you have daikon leaves, boil them, place them in cold water and finely chop them.
- 2. Bring the seasoning liquid to a boil in a pot, add the grated daikon radish and John Dory, and simmer for 7 to 8 minutes.
- 3 Place "2" in a bowl and sprinkle with radish leaves.
Steam convection cooking
- 1. Place the John Dory in a deep hotel pan, pour the grated daikon radish seasoning mixture over the entire surface, cover with a thick paper towel, and then put the lid on.
- 2. Heat the preheated steamer convection oven in combi mode at 160°C with 100% steam for about 13 to 15 minutes.
