Ingredients (for 1 person)

  • Plus John Dory (bone removed) 60g 1 piece
  • Appropriate amount of flour
  • Frying oil (appropriate amount)
  • 20g onion
  • 15g red pepper
  • 15g yellow pepper
  • 8g Enoki mushrooms
  • Green onion (finely chopped )
  • 2g (1/2 teaspoon) salad oil
  • <Seasoning A>
  • 3g soy sauce (1/2 teaspoon)
  • 3g vinegar (just over 1/2 teaspoon)
  • 2g sugar (2/3 teaspoon)
  • 6g tomato ketchup (1 teaspoon)
  • Granulated clear soup base 0.6g
  • 20ml water
  • <Seasoning B>
  • 1/4 teaspoon potato starch
  • 1/4 teaspoon water

Cooking in a frying pan

  • 1 Cut the onion into 5mm wide slices along the grain.
  • 2. Cut the red and yellow peppers into irregular pieces, remove the roots from the enoki mushrooms and cut them into 2cm pieces.
  • 3 Add salad oil and [1] to a frying pan and fry over medium heat until translucent.
  • 4 Add [2] to [3] and stir-fry.
  • 5. Thicken with [4].
  • 6 Coat the John Dory in flour, place in a deep fryer, pour over [5] and sprinkle with green onions.

Steam convection cooking

  • 1. Line a hotel pan with baking paper, arrange the floured John Dory on top, and spray with oil.
  • 2 Place in a preheated steamer and heat in combination mode at 200-230°C with 30% steam for about 10 minutes.
  • * Since you will be putting frozen fish in the oven, please preheat the oven to a temperature 20 to 30°C higher than the heating temperature.
