Marinated Marlin and Shimeji Mushrooms

Ingredients (for 1 person)
- 1 piece of marlin fillet 60g
- a little salt and pepper
- Appropriate amount of flour
- Frying oil (appropriate amount)
- 25g onion
- 5g carrots
- 15g yellow pepper
- Bunashimeji mushrooms 10g
- 2g (1/2 teaspoon) sesame oil
- 10g vinegar (2 teaspoons)
- 1.5g sugar (1/2 teaspoon)
- 3g soy sauce (1/2 teaspoon)
- a little salt
- 30ml water (2 tablespoons)
Cooking in a frying pan
- 1. Thinly slice the onion along the grain, and julienne the carrot and yellow pepper.
- 2 Remove the stems from the shiitake mushrooms and loosen them.
- 3. Add sesame oil to a frying pan and heat over medium heat. Stir-fry "1" until softened, then add "2" and continue to stir-fry.
- 4 Add to “3” and adjust the seasoning.
- 5Sprinkle the marlin with salt and pepper and coat in flour.
- 6. Deep fry slowly in 160°C oil until cooked through.
- 7 Dip “6” into “4” to allow the flavors to blend, then serve.
Steam convection cooking
- 1. Season the marlin with salt and pepper and coat in flour.
- 2. Line a hotel pan with parchment paper, arrange "1", spray with oil spray, and bake in combination mode (30%) at 230℃ for 10 minutes.
