Grilled Marlin with Mustard and Mayonnaise
Ingredients (for 1 person)
- 1 piece of marlin fillet 60g
- 0.3g salt
- a little pepper
- <Seasoning A>
- 25g firm tofu
- 6g mayonnaise
- 1.5g whole grain mustard
- 0.25g salt
- <Side dish>
- Pleated lettuce
- tomato
- lemon
- parsley
Cooking in a frying pan
- 1Sprinkle salt and pepper on the thawed swordfish.
- 2. Drain the firm tofu thoroughly and process it in a food processor until smooth. Mix together the ingredients in A.
- 3. Preheat oven to 180°C and cook the marlin for 12 minutes, then pour the tofu mayonnaise sauce from step 2 over the marlin and cook for a further 7 minutes, checking carefully.
Steam convection cooking
- 1Sprinkle salt and pepper on the thawed swordfish.
- 2. Drain the firm tofu thoroughly and process it in a food processor until smooth. Mix together the ingredients in A.
- 3 Bake in a preheated steam convection oven at 220-230°C with 30% steam for 7-8 minutes, checking carefully.
- 4 Pour the tofu mayonnaise sauce (2) over the marlin and cook for another 10 to 13 minutes, checking the condition.

Also, when cooking large quantities, the thickness of the fish, and the type of fish will affect the finished product, so please adjust the heating time and temperature when cooking.
