Grilled Marlin with Mustard and Mayonnaise

Ingredients (for 1 person)

  • 1 piece of marlin fillet 60g
  • 0.3g salt
  • a little pepper
  • <Seasoning A>
  • 25g firm tofu
  • 6g mayonnaise
  • 1.5g whole grain mustard
  • 0.25g salt

  • Pleated lettuce
  • tomato
  • lemon
  • parsley

Cooking in a frying pan

  • 1Sprinkle salt and pepper on the thawed swordfish.
  • 2. Drain the firm tofu thoroughly and process it in a food processor until smooth. Mix together the ingredients in A.
  • 3. Preheat oven to 180°C and cook the marlin for 12 minutes, then pour the tofu mayonnaise sauce from step 2 over the marlin and cook for a further 7 minutes, checking carefully.

Steam convection cooking

  • 1Sprinkle salt and pepper on the thawed swordfish.
  • 2. Drain the firm tofu thoroughly and process it in a food processor until smooth. Mix together the ingredients in A.
  • 3 Bake in a preheated steam convection oven at 220-230°C with 30% steam for 7-8 minutes, checking carefully.
  • 4 Pour the tofu mayonnaise sauce (2) over the marlin and cook for another 10 to 13 minutes, checking the condition.
