Marlin ginger fried
Ingredients (for 1 person)
- Marlin fillet 60g 1 slice
- 4g flour
- salad oil (appropriate amount)
- Green onion (finely chopped )
- <Seasonings>
- 1/2 teaspoon grated ginger
- 1 teaspoon soy sauce
- 1/2 teaspoon sugar
- 1/2 teaspoon sake
- 1/2 teaspoon sesame oil
Cooking in a frying pan
- 1. Mix the seasonings in a bowl.
- 2 Coat the marlin in flour.
- 3. Add salad oil to a frying pan and fry ② on both sides over medium heat until cooked through.
- 4 Add the seasonings from ① to ③ and mix thoroughly. Transfer to a serving dish and sprinkle with green onions.
Steam convection cooking
- 1. Mix the seasonings in a bowl.
- 2 Coat the marlin in flour.
- 3. Place ② in a hotel pan and drizzle oil on the surface of the fish (spray oil, etc.).
- 4. Heat at 220-240°C with 30% steam for 9-10 minutes in combination mode. (Preheat 20-30°C higher than normal. 240-270°C with 30% steam.)

- 5 After heating, coat the entire surface with the sauce from ①.
