Cod Meunière with Wine Vinegar Sauce
Ingredients (for 1 person)
- Plus cod fillet 60g
- 0.3g salt
- a little pepper
- 2g flour
- 1g butter
- 3g white wine
- <A>
- 15g white wine vinegar
- 3g soy sauce
- 3g mirin
- 2g sugar
- Garlic (grated) 0.25g
- <Side dish>
- Sweet potato, deep-fried lotus root, parsley
Cooking in a frying pan
- 1. Sprinkle salt and pepper on the cod and coat with flour.
- 2. Heat butter in a frying pan, add the cod from step 1, pour in white wine, cover and steam.
- 3. Put seasoning A into a pot and simmer until thickened.
- 4. Place the grilled cod in a serving dish and pour the wine vinegar sauce (step 3) over it.
- 5 *If you cannot obtain wine vinegar, substitute it with other fruit vinegars such as apple cider vinegar or grain vinegar.
- 6 *When you hear the word "vinegar," you might think of a sour dish, but it's not a very sour dish, and the richness of the vinegar is complemented by the sweetness of the sugar and mirin.
Steam convection cooking
- 1. Sprinkle salt and pepper on the cod and coat with flour.
- 2. Place the cod in a preheated steam convection oven, drizzle with melted butter and white wine, and bake at 220-230°C with 30% steam for 8-9 minutes, checking the condition.
- 3. Put seasoning A into a pot and simmer until thickened.
- 4. Place the grilled cod in a serving dish and pour the wine vinegar sauce (step 3) over it.

Also, when cooking large quantities, the thickness of the fish, and the type of fish will affect the finished product, so please adjust the heating time and temperature when cooking.
