Pacific cod simmered in sesame miso
Ingredients (for 1 person)
- Plus cod fillet 60g
- <Seasoning liquid>
- 1/2 tablespoon white sesame paste
- 1/2 tablespoon miso
- 1 teaspoon sugar
- 1/2 teaspoon soy sauce
- 50ml water
- *Use when cooking in a convection oven
- Potato starch (as needed)
Cooking in a frying pan
- 1. Put the seasoning liquid into a pot and heat over medium heat. Once it boils, add the cod fillets and simmer for 6-7 minutes before serving.
Steam convection cooking
- 1 Put the seasoning liquid into a pot and once it boils, add the water-dissolved potato starch to thicken it.
- 2. Place the frozen cod fillets in a deep hotel pan without overlapping, and pour about two-thirds of the seasoning mixture over the fish. Place a thick paper towel on top to cover the entire fish, then pour the remaining seasoning mixture over the top and mix until the entire paper towel is coated with the seasoning mixture.
- 3 Heat a thoroughly preheated steam oven on combination mode at 160°C with 100% steam for about 16 to 18 minutes.
- 4 After cooking, use a paper towel to rub the seasoning liquid into the surface of the fish.
- * Preheat the steamer to a temperature 20 to 30°C higher.
- * The temperature and cooking time vary depending on the model, so please check the core temperature before cooking.
*The cooking instructions listed are approximate temperatures and times. Heating conditions vary depending on the grilling machine you use, so please be aware that even with the cooking method described, the food may burn or not be cooked through completely. Also, when cooking large quantities, the thickness of the fish, and the type of fish will affect the finished product, so please adjust the heating time and temperature when cooking.
