[April's Festival Food] Black Rock Porgy Meunière with Onion Sauce
Ingredients (for 1 person)
- Plus Black Rockfish 60g
- a little salt and pepper
- Appropriate amount of flour
- Frying oil (appropriate amount)
- 25g onion
- 2g (1/2 teaspoon) salad oil
- <Seasoning A>
- 1/2 teaspoon light soy sauce
- 1/2 teaspoon vinegar
- 1/4 teaspoon sugar
- 1g butter
- 1 1/2 tablespoons water
- a little black pepper
- <Seasoning B>
- 1/4 teaspoon potato starch
- 1/4 teaspoon water
- Garnish with baby leaves and cherry tomatoes
Cooking in a frying pan
- 1. Chop the onion into coarse pieces.
- 2. Add salad oil and [1] to a frying pan and fry over low to medium heat until the onions are translucent, then add <Seasoning A>.
- 3 Add seasoning B to [2] and thicken.
- 4 Season the black rockfish with salt and pepper, coat with flour, deep fry in oil, then place in a serving dish and pour the sauce from [3] over it.
Steam convection cooking
- 1. Line a hotel pan with parchment paper, arrange the black rockfish that have been sprinkled with salt, pepper and flour, and drizzle with spray oil.
- 2 Place in a preheated steam convection oven and heat for about 10 minutes on combi mode at 200°C with 30-40% steam.
- 3 Place the grilled black rockfish on a plate and pour the onion sauce over it.
- * The method for making the onion sauce is the same as above.
