Alfonsino white stew
Ingredients (for 1 person)
- Plus 60g Alfonsino (bone removed) 1 piece
- 3g flour
- salad oil (appropriate amount)
- *Spray oil can also be used
- 30g broccoli
- <Seasoning liquid A>
- 150ml milk
- 1/2 teaspoon consommé granules
- 0.5g salt
- <Seasoning B>
- 1 teaspoon potato starch
- 1 1/2 teaspoons water
Cooking in a frying pan
- 1. Coat the alfonsino with flour.
- 2 Heat salad oil in a frying pan over medium heat and brown both sides of [1].
- 3 Divide the broccoli into small florets and boil until soft.
- 4. Put <Seasoning A> into a small saucepan and bring to a boil, then add <Seasoning B> and mix to thicken.
- 5. Place [4] in a bowl and top with [2] and [3].
Steam convection cooking
- 1. Coat the frozen alfonsino with flour.
- 2. Place ① in a hotel pan and drizzle spray oil or oil on the surface.
- 3 Heat in a preheated steamer on combi mode at 220-230°C with 30% steam for 9-10 minutes.
- 4. Divide the broccoli into small florets and boil until soft.
- 5. Put <Seasoning A> into a small saucepan and bring to a boil, then add <Seasoning B> and mix to thicken.
- 6. Place ⑤ in a bowl, then add ③ and ④.
- * Preheat the steamer to a temperature 20 to 30°C higher.
