Ingredients (for 1 person)

  • Plus Alfonsino (bone removed) 60g 1 piece

  • 8g soy sauce
  • 3g sugar
  • 2g mirin
  • 2g of sake

Steam convection cooking

  • 1. Place the alfonsino in a deep hotel pan, pour 2/3 of the well-mixed seasonings A over it, and cover with thick kitchen paper.
  • 2. Pour 1/3 of the remaining seasoning on top of the kitchen paper and cover.
  • 3. Cook in a preheated steamer at 160°C with 100% steam for 13 to 15 minutes, keeping an eye on the food.
  • 4. Remove the lid, remove the scum with kitchen paper, and brush the broth over the fish using the kitchen paper.
  • Place the simmered alfonsino into five bowls and garnish with boiled spinach and chopped ginger.

  • 1. You can also use leafy vegetables such as chrysanthemum instead of spinach.
  • 2 Adding ginger to seasonings will add a nice flavor.
