Simmered Alfonsino and Turnip with Miso
Ingredients (for 1 person)
- Plus 60g Alfonsino (bone removed) 1 piece
- 45g turnips
- A little green onion
- <Seasoning liquid>
- 5g soy sauce
- 2g sugar
- 75ml water
- Potato starch (appropriate amount) *If using a convection oven
Cooking in a frying pan
- Peel and grate 1 turnip.
- 2 Chop the green onions.
- 3 Put the seasoning liquid and [1] into a pot, bring to a boil, add the alfonsino and simmer for 7 to 8 minutes.
- 4 Place [3] in a bowl and sprinkle with the green onions from [2].
Steam convection cooking
- Peel and grate 1 turnip.
- 2 Chop the green onions.
- 3 Put the seasoning liquid into a pot, bring to a boil, then add water-dissolved potato starch to thicken the liquid.
- 4. Place the frozen alfonsino and grated turnip in a deep hotel pan, add 2/3 of the sauce from [3], cover the whole with a thick paper towel and let the sauce soak in, then pour the remaining 1/3 of the sauce over the paper towel and mix it all over the surface, then cover.
- 5 Heat in a preheated steamer in combination mode at 160-180°C with 100% steam for 16-18 minutes.
- 6 Place in bowls and sprinkle with the green onions from [2].
- * Preheat the steamer to a temperature 20 to 30°C higher.
