Stir-fried squid and chicken with oyster sauce
Ingredients (for 1 person)
- Purple squid strips: 200g
- 1/2 chicken breast
- Shimeji mushrooms: 1/2 pack
- Green beans: 6 stalks
- White leek: 5 cm
- Ginger: 20g
- (Chicken seasoning)
- Whole eggs: a little
- Soy sauce: 1 small
- Alcohol: 1st grade
- Potato starch: a little
- Oil: a little
- (Squid seasoning)
- Salt, pepper, sake: a little of each
- Egg white: a little
- Potato starch, salad oil: a little each
- (Combined seasoning)
- Oyster sauce: 1 1/2 tablespoons
- Soy sauce: a little
- Sake: 2 large
- Salt: a little
- Sugar: 2 small
- Pepper: a little
- salad oil
- sesame oil
Cooking in a frying pan
- 1. Cut the chicken into 1cm wide batons and season. Season the squid as well.
- 2. Cut the green beans diagonally. Remove the stones from the shimeji mushrooms and separate them into small clusters.
- 3. Cut the green onions diagonally into 5mm slices and the ginger into thin slices. Mix with the seasonings.
- 4. Drain (1) and (2) in oil.
- 5. Heat salad oil in a pot and fry the green onions and ginger, then add (4) and the combined seasonings and stir fry quickly. Finally, add a little sesame oil.
