Grilled salted Atka mackerel is a classic dish, but if you cut vegetables into large pieces and grill them together, it becomes a stylish Western-style dish.

Ingredients (for 1 person)

  • Plus Atka mackerel fillet 60g
  • a little salt
  • 1/2 turnip
  • 1/4 red pepper
  • 1/8 yellow pepper
  • 1/2 king oyster mushroom (15g)
  • 1 teaspoon olive oil (for vegetables)
  • 0.5g olive oil (for fillets)
  • a little Italian parsley
  • <Seasonings>
  • 2 teaspoons balsamic
  • 1 teaspoon soy sauce
  • 1/4 teaspoon honey

Cooking in a frying pan

  • 1. Put the olive oil and salt in a bowl, mix, then add the frozen Atka mackerel fillets and coat them evenly.
  • 2. Cut the turnips in half lengthwise, leaving the skin on. Cut the red and yellow peppers lengthwise. Cut the king oyster mushrooms lengthwise.
  • 3. Place the vegetables cut in step 2 and olive oil in a bowl and mix well.
  • 4. Place "1" and "3" on the grill rack and cook over medium heat.
  • 5. Put the seasonings into a bowl and mix well.
  • 6 Once "4" is cooked, garnish with "5" in a small bowl and Italian parsley.

Steam convection cooking

  • 1. Place the frozen Atka mackerel fillets in a bowl with olive oil and salt, and coat them evenly.
  • 2. Cut the turnips in half lengthwise, leaving the skin on. Cut the red and yellow peppers lengthwise. Cut the king oyster mushrooms lengthwise.
  • 3. Place the vegetables cut in step 2 and olive oil in a bowl and mix well.
  • 4. Place "1" and "3" in a hotel pan without overlapping, and heat in a preheated oven at 230°C/30% steam in combi mode for 9 to 10 minutes.
  • 5. Put the seasonings into a bowl and mix well.
  • 6 Once "4" is cooked, garnish with "5" in a small bowl and Italian parsley.
  • * Preheat the steamer to a temperature 20 to 30°C higher.
