Braised silver cod
Ingredients (for 1 person)
- Plus Silver Cod (bone removed) 60g 1 piece
- <A>
- 8g soy sauce
- 3g sugar
- 2g mirin
- 2g of sake
- 15g chrysanthemum
- 8g green onions
Cooking in a frying pan
- 1. Cut the green onions and chrysanthemum into bite-sized pieces.
- 2. Put 75cc of water (for one person) into a pot and bring to a boil. Add the seasonings (A), silver cod, and green onions and simmer. Add the chrysanthemum just before turning off the heat.
- 3 *You can also use leafy greens such as spinach instead of chrysanthemum.
- 4. *You can also add ginger to enhance the flavor.
Steam convection cooking
- 1. Cut the green onions and chrysanthemum into bite-sized pieces.
- 2. Place the silver cod in a hotel pan, add the green onions and mix well.
- 3 Pour seasoning A over 2/3 of the dish and cover with kitchen paper.
- 4. Pour the remaining seasonings over the kitchen paper and cover.
- 5. Cook in a preheated convection oven at 150°C with 100% steam for 13 to 15 minutes, keeping an eye on the food.
- 6 Remove the lid, remove the scum with kitchen paper, and brush the broth over the fish.
- Place the stewed silver cod in seven bowls and garnish with chrysanthemum flowers heated in steam mode.
