Braised silver cod in gochujang miso
Ingredients (for 1 person)
- Plus Silver Cod (bone removed) 60g 1 piece
- Small onion as needed
- Threaded chili peppers (as needed)
- <Seasoning liquid>
- 1 teaspoon miso
- 1/2 teaspoon gochujang
- 1/2 teaspoon soy sauce
- 1/2 teaspoon sugar
- 50ml water
Cooking in a frying pan
- 1. Finely chop the green onions and cut the chili threads into pieces about 3cm long.
- 2. Put the seasoning liquid and silver cod into a pot, bring to a boil, and simmer for 6 to 7 minutes.
- 3 Place [2] in a serving dish and garnish with [1].
Steam convection cooking
- 1. Preheat the steamer to combination mode, 100% steam, and 170°C.
- 2. Arrange the silver cod in a hotel pan and pour 2/3 of the seasoning over it. Cover the entire surface with thick paper towels, then pour the remaining 1/3 of the seasoning over them and turn the paper the color of the seasoning.
- 3 Preheat a well-prepared steamer in combination mode at 100% steam and 170°C for 15 minutes. After heating is complete, let it cool slightly and serve in a serving dish to let the flavor soak in.
