[January's event food] Silver cod in curry sauce
Ingredients (for 1 person)
- Plus Silver Cod (bone removed) 60g 1 piece
- a little salt and ginger
- Appropriate amount of flour
- salad oil (appropriate amount)
- 10g onion
- 5g red pepper
- 1/2 teaspoon salad oil
- <Seasoning A>
- 1/2 teaspoon flour
- 1g curry powder
- <Seasoning liquid B>
- Granulated consommé 0.5g
- 2g butter
- 30g milk
- a little salt and pepper
Cooking in a frying pan
- 1Sprinkle salt and pepper on the silver cod and coat with flour.
- 2. Fry [1] in oil until golden brown on both sides.
- 3. Roughly chop the onion and red pepper.
- 4 Heat salad oil in a frying pan and fry the onions over medium heat until they become translucent, then add the red pepper (Seasoning A) and stir-fry.
- 5 Add seasoning B to [4] and simmer, then season with salt and pepper.
- 6 Place [2] in a bowl and pour the sauce [5] over it.
- 7 Garnish: lettuce, Italian parsley
Steam convection cooking
- 1. Line a hotel pan with parchment paper, arrange the silver cod that has been sprinkled with salt, pepper and flour, and spray with oil.
- 2 Place in a preheated steamer convection oven and heat on combi mode (30%) at 220°C for about 10 minutes.
