In Toyama, yellowtail is used in zoni, a traditional Japanese soup made with grilled yellowtail and plenty of root vegetables. It's so delicious you'd never guess it was made with frozen vegetable mix and noodle soup.

Ingredients (for 1 person)

  • Plus 1 piece of 60g yellowtail (bone removed)
  • 36ml of noodle soup
  • 150ml water
  • 18ml soy sauce
  • Frozen Japanese vegetable mix 100g
  • Yuzu 0.5g
  • 1 mochi
  • 15g Komatsuna
  • 2 slices of kamaboko

Steam convection cooking

  • 1. Add the mentsuyu, water, and soy sauce to a pot, then add the frozen Japanese vegetable mix and bring to a boil.
  • 2. Heat the yellowtail in a preheated steam convection oven.
  • 3 Add yuzu and (2) to (1) and simmer over medium heat for about 2 minutes.
  • Serve (3) into 4 bowls and garnish with grilled mochi, boiled komatsuna, and kamaboko.

POINTApplication tips

  • 1. Grill the yellowtail until fragrant, then place it in the boiling soup. The key is not to simmer it for too long.
