Steamed yellowtail with black fermented black beans
Ingredients (for 1 person)
- Plus 60g yellowtail (bone removed) 1 slice
- Bean drum 5g
- 18ml of sake
- 5g sugar
- 30g white leek
- 2g ginger
- 50g shimeji mushrooms
Steam convection cooking
- 1. Finely chop the fermented black beans and mix with sake and sugar.
- 2 Finely chop the green onions and ginger.
- 3. Mix (1) with the frozen yellowtail and place it in a hotel pan in a steam convection oven. Add (2) on top, cover and heat.
POINTApplication tips
- 1 If you can't get black fermented black beans, substitute with red miso.
