Grilled Pangasius with Plum and Miso
Ingredients (for 1 person)
- Pangasius fillet (bone removed) 60g
- 4g miso
- 2g pickled plum (flesh)
- 2g mirin
- <Side dish>
- Grated radish and cucumber
Cooking in a frying pan
- Grill 1 pangasius on a fish grill for 7 to 8 minutes, checking carefully.
- 2. Remove the seeds from the umeboshi and smash them with a knife. Mix the umeboshi with miso and mirin, spread it on the basa, and bake, checking the condition, until the surface is dry.
Steam convection cooking
- 1. Remove the seeds from the umeboshi and pound them with a knife. Mix the umeboshi with miso and mirin.
- 2. Arrange the Basa and spread the well-mixed mixture from step 1 on top.
- 3 Bake in a preheated steam convection oven at 220-230°C with 30% steam for 8-9 minutes, checking carefully.
- 4. Miso and mirin burn easily, so keep an eye on them while cooking.
