Basa meunière
Ingredients (for 1 person)
- Pangasius fillet (bone removed) 60g
- 0.3g salt
- a little pepper
- 4g flour
- 2g oil
- 1g butter
- 5g white wine
- 25g eggs
- <A>
- 4g mayonnaise
- 0.3g salt
- 1g sugar
- a little pepper

- Baby leaves, cherry tomatoes, parsley
Cooking in a frying pan
- 1. Sprinkle salt and pepper on the pangasius and coat with flour.
- 2. Heat oil in a frying pan, add the pangasius from step 1, add white wine, cover and steam. Finally, add the butter.
- 3. Boil the eggs and chop them finely, then add A and mix. 4. Place the meunière in a serving dish and pour 3 on top.
Steam convection cooking
- 1. Sprinkle salt and pepper on the pangasius and coat with flour.
- 2. Place the pangasius in a preheated steam convection oven, drizzle with white wine, add oil and melted butter, and bake at 220-230°C with 30% steam for 8-9 minutes, checking carefully.
- 3 Boil the eggs and chop them finely, then add A and mix.
- 4. Place the meunière in a serving dish and pour 3 on top.
- 5. To coat frozen basa in flour, use a bag to make it easier.
- 6 Butter burns easily, so add it at the end to add flavor.
