Alaskan redfish and clam tomato soup
Ingredients (for 1 person)
- Plus Alaskan Red Fish 60g 1 piece
- 5 clams (with shells)
- 25g onion
- 15g celery
- 1 snap pea (8g)
- 100g canned tomatoes
- 1 teaspoon of olive oil (4g)
- 1/2 teaspoon granulated consommé
- a little salt and pepper
Cooking in a frying pan
- 1. Soak the clams in 3% salt water to remove any sand, then rinse the shells under running water.
- 2. Cut the onion into 2cm chunks and thinly slice the celery.
- 3 Boil the snap peas until golden brown.
- 4. Put the onions in a pot and fry over medium heat until translucent, then add the celery, tomatoes and clams and simmer over medium heat.
- 5 When ④ comes to a boil, add the Alaskan red fish and simmer for a further 6 to 7 minutes, then season with salt and pepper.
- 6 Place in bowls and garnish with ③.
