Alaskan redfish and clam tomato soup

Spring is the season for delicious shellfish, and this hearty soup is made with Alaskan redfish and clams. The umami of clams and tomatoes makes it even more delicious.

Ingredients (for 1 person)

  • Plus Alaskan Red Fish 60g 1 piece
  • 5 clams (with shells)
  • 25g onion
  • 15g celery
  • 1 snap pea (8g)
  • 100g canned tomatoes
  • 1 teaspoon of olive oil (4g)
  • 1/2 teaspoon granulated consommé
  • a little salt and pepper

Cooking in a frying pan

  • 1. Soak the clams in 3% salt water to remove any sand, then rinse the shells under running water.
  • 2. Cut the onion into 2cm chunks and thinly slice the celery.
  • 3 Boil the snap peas until golden brown.
  • 4. Put the onions in a pot and fry over medium heat until translucent, then add the celery, tomatoes and clams and simmer over medium heat.
  • 5 When ④ comes to a boil, add the Alaskan red fish and simmer for a further 6 to 7 minutes, then season with salt and pepper.
  • 6 Place in bowls and garnish with ③.
