Grilled horse mackerel with salt and koji

メニューコンセプト
Shio-koji is a traditional Japanese seasoning made by adding salt and water to koji and fermenting it. It has a rich flavor and enhances the umami of fish. The sweetness of mirin gives it a mellow taste.

Ingredients (for 1 person)
- Plus Horse mackerel fillet 60g 1 piece
- 5ml mirin
- 15g salt koji
Steam convection cooking
- 1 Mix mirin and shio koji.
- 2. Coat the frozen horse mackerel with (1) and arrange them on a steam convection oven tray. Spread any remaining (1) over the arranged horse mackerel.
- 3 Heat in a preheated steam convection oven.
POINTApplication tips
- 1 Shio koji also goes well with vegetables and boiled mushrooms.
