Ingredients (for 1 person)

  • Plus red fish (bone removed) 60g 1 piece
  • A little salt and pepper
  • 1 teaspoon olive oil
  • 3 clams (shelled)
  • 2 cherry tomatoes
  • 1 green olive
  • 2g garlic (minced)
  • 1/8 lemon
  • 2 teaspoons white wine
  • 2 teaspoons water
  • Italian parsley

Cooking in a frying pan

  • 1 Wash the clams to remove any sand.
  • 2Sprinkle the Alaskan redfish with salt and pepper.
  • 3 Add olive oil and garlic to a frying pan and fry over low heat until fragrant. Add the Alaska redfish and fry briefly.
  • 4 Add the clams, cherry tomatoes, green olives, and seasoning liquid to "3", cover, and steam over medium heat for 5 to 6 minutes.
  • 5 Place "4" in a serving dish and garnish with Italian parsley.

Steam convection cooking

  • 1. Place the Alaskan redfish in a deep, lidded hotel pan and spray with salt, pepper, and oil spray.
  • 2. Add the clams, cherry tomatoes, green olives and seasoning, then cover and place in a preheated convection oven. Heat in combination mode at 150-160°C with 100% steam for 13-15 minutes.
